Healthy pancake recipes to save for Pancake day and beyond! 

Pancakes can bring back delicious childhood breakfast memories, but they have also received some negative publicity in the past due to the sugar content and shop-bought mixes available that are not very high in fibre. But did you know that, with the right ingredients, they can be a great source of energy, protein and fibre? Little swaps can make a huge difference in the nutritional value of pancakes, and sometimes even make them taste better!

Curious to find out how? Whether you plan to celebrate Pancake Day, or just simply need a new recipe to try, here are our favourite ones that won’t make you feel any guilt and can actually build to your dietary goals! And, in keeping with the style, we’ll be sampling them all from the comfort of our Round yoga mats.

1. Protein packed pancakes

This recipe mixes in protein powder, oats, eggs and banana that will give you a smooth batter full of nutrients and it takes 2 minutes to blend together. Simply toss all the ingredients in a blender and whizz until the oats have broken down, then cook! The perfect recipe to add a little extra protein into your daily intake.  

2. Two-ingredient Banana pancakes

For the dairy and gluten free, or for those who simply dont have baking ingredients lying around, these pancakes might not pass like your fluffy traditional pancakes but the textures does resemble thicker crepes, with what the author calls a “ custard-like with a soft, yielding texture and a creamy melt-in-your-mouth quality”, which sounds like heaven to us. Make sure to be tender with flipping these as the batter is much thinner than usual pancakes, and keep them small so it is easier for you! 

3. Vegan pancakes

Prefer a vegan option? We’ve found a great recipe that yields four fluffy pancakes, you won’t even know the difference! You can also swap in whole-wheat flour to make them alittle healthier. 

Just fancy a quick and easy pancake?

Do the 3, 2, 1 method: mix 300ml milk, 2 large eggs and 100g flour, then cook on a hot pan. These are more like crepes than american fluffy pancakes.

Our favourite pancake toppings:

  • For fluffy pancakes, always fruit, maple syrup, nut butters and yoghurt will do the trick! 

  • Lemon and sugar are the classic with crepe-like pancakes!

  • Sometimes we like savoury pancakes, we use the crepe-style recipe and fill them with cheese, mushrooms, pancetta and greens for a filling breakfast or lunch!
